This creamy red Thai curry has bursts of coriander and coconut and is packed with nutrients, plus extra protein from the chickpeas.

Cooking time: 6 hours on low

Ingredients: Kumara, chickpeas, onion, spinach, coconut cream (coconut cream, stabilisers (xanthem gum E415 & Guar Guar Gum E412), curry paste (chilli, lemongrass, shallot, garlic, salt, galangal sugar, coriander, Thai basil leaves kafir lime peel), spices.

Packed in a kitchen that uses gluten, eggs, nuts.

Serve on rice with fresh coriander on top

Another awesome fragrant meal that was delicious to come home to after a full day at work (so simple that hubby put it in the crockpot and turned on 😜). Steamed rice and a side of steamed leek

Wow this Curry is truly awesome. Packed with flavours that tantalise the taste buds.
Tried adding cooked chicken to the pot in the last hour of cooking. Worked out great, the chicken taking on the fabulous flavours.
Served with white steamed rice. Superb meal, so easy, a definite repeat order
