Cheesy Ratatouille (GF, V)

Really easy meatless meal. The Mozzarella great twist. Served mine with Penne Pasta and great value filling meal. Nice way to eat eggplant

This is so yummy! I don't like eggplant or courgette but I actually really really enjoyed this! My son has even requested to have it for his birthday dinner so it must be a winner. We serve it with dinosaur pasta and it goes down a treat. We got the 2 person pack and when served with pasta it filled up 2 adults and a 6 year old. Might have to get the 4 person pack as we always want seconds because it tastes so good!
